    BBQ Sauce Comparison

Alright I've been checking a lot of books out at the library, and typing up all the sauce recipes.

Here's a comparison of 10 different sauces and their ingredients.

Any ingredient that's less that's 1 or less isn't shown here, but is on the excel sheet.

Any sauces you'd suggest I add? Below is KC style, or close to KC style since vinegar and mustard sauces are very different.

    Uploaded an image with %.
    Ketchup 9 Liquid Smoke 6 Oil 2
    Worcestershire 8 Cayenne 5 Corn Syrup 2
    Onion 7 Chili 5 Maple Syrup 2
    Garlic 7 Mustard 5 Paprika 2
    Cider Vinegar 7 Liquor 5 Water 2
    Salt 7 Honey 4 Hot Sauce 2
Molasses 7 White Vine. 4 Soy Sauce 2
    Brown Sugar 6 Cumin 3
    Black Pepper 6 Citrus 3

What is the goal here? All KC sauces will use similar ingredients. Vinegar and mustard-based sauces will look very different.

You might find it more interesting to consider the proportions of each ingredient as part of the overall sauce.

Now that looks interesting. The JD sauce looks fun. I made it once. The alcohol burns off but it has great flavor.

As always, to eventually make the best BBQ in the world.

Putting recipes in a spreadsheet helps visualize, rather than looking at recipes individually. Information is always interesting, what is being most commonly use, what other ingredients are being used.

I might add a proportion column, and do a % of how much an ingredient makes up a recipe, but will need to adjust the spreadsheet and probably convert everything to a common denominator like teaspoons.

I'm also working on a similar "database" for ingredients, rubs, injections, marinades, etc...

Definitely looks like you are having fun. Playing the mad scientist. I mentioned in a previous post to you that I spent 15 years concocting, measuring, trying, plying, etc. different ingredients to find that BBQ sauce that meets my criteria. I found it, but it was commercial BBQ sauces mixed together. Been happy ever since.

Wish you the best in your endeavors and look forward to you posting your BBQ sauce trials.

fitzoo7 Not really disappointing. Always focus on the good.....I have a BBQ sauce that I really like, learned a lot and had a ton of fun experimenting. It would have been a disappointment that after 15 years I did not like BBQ anymore.

I do something similar with commercially available rubs when barbecuing pork. What is your sauce recipe TripleB?

mrichie1229 1 part Head Country Original and 1 part Blues Hog Original. I use it on pork ribs and pulled pork. It is sweet and meets my sauce criteria. That being, the last bite with sauce has to be as good as the first. Nothing worse than having a sauce where after a few bites, you’re wiping off the sauce for whatever reason ( too sweet, too hot, too crappy, etc). Been using this concoction for years.

You're doing the work for sure. Hope it results in a great sauce for you. I make a very simple sauce which is the only one the grandkids will use. For ourselves we have a couple of favorite commercial sauces and stick with that. You're having fun with bbq, so enjoy your quest.
