    Meathead, The AR website recipe for MH Carolina Mustard Sauce does not call for cooking the sauce, but your book does. Is this a new development that isn't reflected on the website recipe?

        I make this sauce for my spot at the Farmer's Market. People who try it love it, but I've never cooked it before. While reading the new BBQ Bible, I noticed he instructed that it be cooked.

          Dr ROK - Offer two products … one cooked and the original. Raise the price something like 50¢ a bottle for the original and $1 for the cooked bersion. We marketing types call it product differentiation. It's weird but people expect to pay more for an old product when a new one is introduced.

        I know Maurice's Piggie Park cooks it down in Columbia, SC and that's basically the mecca of South Carolina mustard based bbq sauce. I've made a lot of mustard and it's always cooked.I guess if you're not using seeds or powder (prepared etc) then you might not have to.
