    BeerBQ Sauce

    This is my riff on Chris Badenoch's original recipe.

    1 tbsp oil
    1/2 brown onion, finely diced
    1 garlic clove, crushed
    1 330ml bottle dark larger (I used Matsos Smokey Bishop)
    2 cups ketchup
    2/3 cup apple cider vinegar
    1/3 cup brown sugar (67g)
    1/2 tbsp salt
    1/2 tbsp black pepper
    juice of 1/2 lemon
    3 tbsp of soy sauce
    dash of your favorite hot sauce

    Heat the oil in a saucepan and cook the onion and garlic until soft.
    Add the rest of the ingredients and mix well.
    Bring to the boil then let simmer for 30mins or until thickened.
    Blend until smooth.
