I did another McRib tonight. I know Meathead will cringe. I put Stubbs Spicy sauce into the mix. Really good. Kicked it up nicely. In the past I've used M.H's KC sauce. And I love it but this put an extra umph into it. Again, I do not do pickles. I do pickled jalapenos AKA Cowboy Candy. Outstanding.

Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.

OMG. I'm gonna jump offa da bridge. LOL. Just kidding. I like Stubbs. Remember you can doctor my sauces and ay others to your [preferecen. We went easy on the heat because we know a lot of people can't take it. But you can always amp it up.
ANd I keep a quart of pickled jalaps around and use them on egg salad, tuna slalad, burgers, so many things.
