    Hot sauce from flakes, anyone ever try it?

    Pretty straightforward. I have more pepper flakes from Flatiron than I will ever use in my life. They’re all great, but I need to do something with them, especially the I Can’t Feel My Face flakes, because one jar of those will last a lifetime, but it could be made into a couple dozen bottles of useable hot sauce.

    Without any guidance, I would reconstitute them, and then proceed with the Meathead Controlled Burn Hot Sauce, which I’ve made and which has generated raves from absolutely everyone who has tried it. But if there are any tips or pitfalls I should watch for, it would be good to know before proceeding. That stuff can get mighty hot when dealing with reconstituted flakes rather than fresh.

      CaptainMike Thanks for the link! I also emailed Flatiron Pepper Co; they said they reconstitute the flakes by soaking in water for a couple hours, then making a paste to mix with vinegar and other spices and flavors.

      I’ll put this on my to do list, projects are getting backed up.

        You can also email Mike at CPM if you have any questions and he's pretty quick to respond. It may or may not be a "Mike" thing, but I suspect he's a pretty cool cat. Let us know how it turns out, I haven't done so myself but I'm interested in trying.

      I've found myself keeping the Flatiron jars too long - a year open and they've lost most of their heat. Making a pepper sauce from them seems like a great way to use them up before I order more. Anxious to see you plow the path for me though...

        You can also make chili oil or salsa macha. Both of those will keep dang near forever in a sealed jar.
