Just got my order of Meathead’s KC BBQ sauce from Amazon and it’s nothing like the one I’ve made at home from his recipe in his book many times. Super thin consistency and has a dimetappy artificial aftertaste to it. Not at all what I expected and I’m wondering if anyone else has had that experience or if it’s possible I got a ruined or counterfeit batch?? Thanks in advance.

I’ve had this happen on occasion with sauces from the store. Not exactly the cough syrup thing but definitely something different in consistency and taste. I’m sorry to say I haven’t ordered sauces or ribs from the internet yet so I can’t comment on his.

All the sauces and rubs are different from the recipes on the site or in the book otherwise what's the point. And yes, it is thinner. I don't like sauces that hide the meat. I do not know the word dimetappy so I don't know what you mean. And I've used it a lot and never found it to be cough syruppy. Hmmmmm.Last edited by Meathead; July 31, 2022, 08:42 PM.

After cooling from transit (it was almost 100 degrees in SoCal today) it thickened up quite a bit (still thinner than the homemade but much more palatable than before).
By dimetapp-y I just meant it has a cough syrupy aftertaste. The cap was damaged when I got it but the seal was intact so I figured it was ok but I’m concerned that something happened to alter the flavor. My wife tried it with no indication from me that anything was amiss and spotted the same aftertaste.

Just for the record the book recipe is the best KC style BBQ sauce I’ve ever tasted by a country mile and your recipes and recommendations never miss. I (and my family) owe you everything when it comes to outdoor cooking and your book and this site have immeasurably improved our lives.
Sorry to be a pain about this.

I’ve had two bottles of MH’s sauce that I ordered from SnS directly prior to it being available on Amazon. They both tasted fine. No cough syrup aftertaste. No obscure rapper references like those Texans will give you. Just barbecue sauce. You and your wife appear to still be with us, so that’s a plus.

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
I’ve gone through 4 bottles. They’ve all been excellent.
Regarding it being different from the recipe, and thinner: mine might be thinner, yours might be thicker. My garlic cloves might be larger, your onions might be bigger, I might use light brown sugar and you might use dark, I used McCormick’s chili powder and you used Gebhart’s, I used A1 Steak Sauce and you used Heinz…. Let’s hope it’s different!
The greatest difference between the recipe and the commercial version, for those who haven’t compared, is the liquid smoke in the bottled sauce. In actual use, on ribs, that is a non issue. It’s excellent.

You’ve found a way to outscore my all-time favorite, Head Country Sauce. Yours is more complex and satisfying, but remain truly in the authentic flavors of pitfired pork. Love them."
