    How long does Alabama white sauce last?

    Just curious as to how long it'll last in the fridge? I made some a few weeks ago and wanted to finish up that batch this weekend but I'm unsure how long it'll stay good. It's a bit separated at the moment, but I think that's okay.

    Is it okay to drizzle on some Cornell chicken this weekend?

    When doubt, toss it out.
    How hard is it to make a new batch?
    You can heat it to a boil to pasteurize.

      how about a simmer? like 170*F? would that work?

    Just my experience, most home made sauces that go bad, go bad by picking up refrigerator odors. That’s about 4 months.

      How long it keeps is different than how long it lasts, so I don’t know.

      It's mayo, vinegar, Worcestershire and some seasonings. why risk it, just make more.

        Whatever the expiration date on your mayo is, longer since the acidity and sugar content are higher.

          It will last longer than the mayo it was made from will.

            Alabama White Sauce has not a color.... but.... in some cases, you could say that white is a color. The grey area: Technically, pure white is the absence of color. In other words, you can't mix colors to create white. Therefore, white is the absence of color in the strictest sense of the definition.

              I'll join the technical discussion, bbqLuv , because I'm just that dorky and because my last name is White. You can mix colors to create white if it's light we're talking about. :-) See? I really am a dork. :-)
