    Nice graphics!

    "Ask your butcher, they're the experts" should also say "unless they're a chain supermarket "butcher" ". Ask a regular supermarket butcher up here for tri tip and they look at you and say "a what???" Lol.

      Truth. Friend of mine has been the meat manager at one of our local chain stores for 15 years. He never heard of a tri tip until I showed him one.

            Potkettleblack You're right, and in fact they used to have a chart that showed time AT temps for pasteurization, and they specifically stated these (above) common temps are the "instant kill". Perhaps they are reworking their time & temps chart because I can no longer find it and the link I'd saved doesn't work anymore. I don't take chicken to 165. Breasts=155, wings & dark meat=180-190.

            Yeah... my chicken cookery is built on keeping breasts under 165 and darks and wings over.
