Try pan sautéing broccoli or potatoes in bacon fat over moderate heat to see what I mean.
It is a cross between prosciutto and Ameerican bacon.
Make sure you explain that you want raw bacon, not cured, and not csliced.
But take note: It will not get as hard and crispy as commercial cold smoked bacon with ntrates.
