Grew up in Richmond, Va. Oyster roasts were frequent in the fall and winter at our home, friends' homes and especially at yard parties for the Richmond Marathon. Chesapeake Bay oysters are a favorite of mine.

Here on the Gulf coast oysters are always shucked from the hinge side, probably done hundreds myself.
Of course I’m partial, but I spent a lot of time in the DC area and have had a variety of blue point and others that are championed on the East Coast. None of them are as large and flavorful as the Gulf species, they literally fill you mouth.
I like to eat them raw, mostly on the half shell but Love buying them by the quart with my favorite brew. As mentioned they are great smoked, I also like oysters Rockefeller. They are a summer staple in my diet.
