      Huskee just read the recipe and the brine with baking soda is a neat trick i will be trying very soon. Love the idea of smoked cheddar instead of plain old sharp cheddar in the grits. Try bay leaves for the wood, or a few branches of bay tree snipped into 2 inch twigs. Probably the best flavor to smoke shrimp. I use a steamer basket with a little water, and bay leaves to smoke shrimp all the time.
