Skirt steak and a cheap charcoal chimney are all you need for the best steak fajitas recipe. The afterburner cooking technique does the rest. And it helps to have a good marinade and some veggies.
If they're the stainless steel type like SnS uses, they should be fine....judging by how my SnS kettle grate fares with my Vortex. Now, if they are the cheap nickel-plated ones -- like the stock Weber kettle grate -- perhaps not so much.

I've been using the afterburner method since I first read about it on the free side many moons ago.
In fact here's a photo from Aug. 2014 of, what I believe is my first cook with it. I took Meathead's advice for cheap steak, and if I remember right, it came out near perfect!
I had leftover cast iron grates (still have them) from a small Charbroil cooker that I used.
