The rendered fats of beef, pork, and poultry have marvelous flavors and are excellent for frying and other culinary applications. Meathead walks you through his simple, straightforward method for rendering any animal fat to make beef tallow, pork lard, chicken schmaltz, duck fat, and more.

    It's great to make for guests, and if ya really want to impress them, mash the soft butt into butter molds for each guest. Here's a link to one set, and you can even get seasonal molds.

        We have to finish the testing on that, we have a general outline and basic idea but we can't rush it and put out something subpar. We want to make sure it's the real deal.

      I wonder if you could render the fat using the sous vide? Perfect temperature and no smell while rendering.

        Meathead there is a typo on the butter recipe! It reads: buttermilk starts to will separate.

          I’m glad! I’m definitely going to have to use the butter recipe. I don’t realize that you can make both butter and buttermilk at the same time!
