The ThermoWorks RFX is the company's entry into the wireless thermometer category. Wireless thermometer technology typically presents some problems, and this product employs several novel approaches to solve some of the problems. Dispensing with a sensor in the wireless probe’s handle solves two problems: 1) it provides a more accurate reading of ambient temperature, and 2) it reduces signal attentution, which results in a more stable connection between the probe’s signal and your wireless device.
Nice write up! I used mine for the first time this Thanksgiving, and I've never had wireless probes be as spot on temperature wise as these were. I put two spatchcocked birds on my pit, and both were within less than 1/2 a degree from my Thermapen One when I checked.

Probably granted an FCC exemption due to low signal strength, unlikely to cause interference with civilian radio transmissions? I dunno, just a guess, as I don't know much of anything about those rules & regs.
