    Possibly the best Tri-Tip I have ever eaten

    This place serves a "perfectly butchered ribeye" that is dry aged 40 days, cooked sous vide style, then chilled until ordered. Then they sear it to


    We let the SV bath go 3 hours in this video. We'll have another shorter video coming up soon where we let the SV go for 18 hours. The results were interesting.

    Watched that the second you posted it! Man that looked sooooo good. I have SV'ed dang near everything but I have not tried a tri tip yet. Now I must! Can't wait to see the results of your longer SV. I'm stirring up some skirts tonight on the pit. Otherwise I would be doing this!

      I absolutely loved my most recent Tri Tip. Did SV, then Sear. Family said it was the best steak they'd ever eaten and I'm not shy about taking them to steak houses.

    Sure Dave just make me more hungry than I already am. I was going for seafood tonight. Now I'm not so sure. Looks awesome.

      My brother. Tri tip the the BOMB. The only way to screw it up to over cook it. Let' er rip!!! Skirts are darn good too!

              Thanks for the details in the video! I think I can get even better after watching. I like the use of a small amount of water to get som smoke flavor on the meat after the SV!
