    I went to a restaurant in Italy where they were doing that table side. Unfortunately that's not what we had because I couldn't read the menu and ended up with Artichokes and pasta instead by pointing at a picture.

    I have always wanted to try this. Now that I have nothing else to look forward to for a while, I might as well give this a go.

    I was gonna smoke it and then drop it in my deep fryer. Plus, with pork belly, you really can't go wrong.

      In Italy this is Porchetta. I made it one year for New Years Eve. I ordered it from the butcher with the loin attached. Used the rotisserie and then Indirect heat and the skin cracked like glass it was fantastic. When I was in Italy we went to visit my moms home town and in a neighboring town there was a flea market and the food trucks there had wood fired rotisseries and all were making Porchetta. Of course they all let you try it before you buy I’m pretty sure I made a full meal of all the samples!
