    I have fresh corn tortillas, looking for a solid casserole recipe

    So, I stopped at our local tortilleria here in town that specializes in making tortillas. Yes, that's all they make. Corn and flour. I bought a pack of the flour and couldn't resist on buying corn as well. My wife only likes flour but honestly that's what she prefers for tacos. I'm looking for a Mexican casserole dish that utilizes corn tortillas. These are small, think taquito size. She loves tortilla chips, corn on its own etc. It's really just the texture with tacos. I've got plenty of kitchenware to handle just about any task. I need something heavy on sauce and some cheese.

    Hulagn1971 I’ve had success with this recipe.

    Pati makes an Aztec Casserole, otherwise known as Mexican Lasagna! Instead of pasta sheets, it has layers of corn tortillas filled with homey Mexican ingredients like poblano rajas, corn, black beans, and nopalitos.

    Green Chile Chicken Enchiladas! My wife makes this as a casserole, so layered with corn tortillas, green chile/chicken mixture, cheese, then repeat.

    Or do a stacked enchilada, making each serving separately. This is how I make enchiladas, and finished them in the oven with a quick broil to melt the cheese.

      58limited do you roast the poblanos first then skin them and remove the seeds?

      Hulagn1971 No,I remove the seeds then I usually just dice it like a bell pepper but I bet fire roasting and peeling would add some nice flavor. When out of Rotels I've used fire roasted tomatoes and a small can of green chilies.

    Argh, I'd love to stop by there on the way to or from the farm, or to or from seeing the boy, but I'm not usually near Kernersville when they'd be open

      Hmm...looks like there are a couple of tortillerias in the Raleigh and Durham area, I may have to make some trips...

    Well, in my house, I have learned ya eat everthing with tortillas. Trying to to git the hang of eatin with out a fork.

      King Ranch Casserole. This is a variation of one that we make using smoked/grilled chicken and lightly cooked corn tortillas..

          58limited it was a hit. Unfortunately the Food Kitty was out of poblanos, bummed me out. I used a cup of diced yellow and red bell peppers instead. Also finely diced a nice jalapeño, seeds and veins removed. Used shredded cheddar and shredded chihuahua melting cheese. A light sprinkling of smoked paprika per your guidance. 30 minutes at 325° then a few minutes under the broiler. Nice and bubbly with good color. This was a great meal, thank you for sharing your recipe!

            Hulagn1971 My pleasure. I started to make this tonight thinking that I had some corn tortillas in the fridge but, alas, I had used them all awhile back. I put the soup and chicken mixture in the fridge and I'll make it tomorrow after going to the store for some tortillas. I could have made some but didn't feel up to it - long day at work.
