    Lobster Rolls

    Headnote: I went to Maine for nephew's wedding in 2021. My daughters and I had lobster rolls for the first time. We tried both the warm butter and cold mayo roll versions. I liked the cold rolls better and this recipe is the classic cold Maine lobster roll. However, the recipe also calls for warming the lobster up first in butter as in the Connecticut style and then adding to the mayo mix. Ingenious, the best of two flavors, delicious and easy to make. I've made this about 3 times and always a hit.

    Buying lobster rolls from a food truck or brick n' mortar shop can be expensive. Rolls average between $18 - $25 dollars. I buy a 5 lb. case of 4 oz. lobster tails. Use what I need and save the rest for surf & turf.

    Makes or Serves: 4​ rolls

    Takes: Roughly 1 hour.

    Serve with: Potato chips, French fries, clam chowder, salad...whatever you want.

    Special tools: None

    Ingredients:

    1 lb. Lobster Meat, steamed and chilled
    ¼ C. Celery, minced
    ¼ C. Mayo
    1 Tbsp. Lemon Juice
    1 Tbsp Chives, minced
    1 tsp. Lemon Zest
    ¼ tsp. Kosher Salt
    Old Bay Seasoning, dash
    ¼ tsp. Black Pepper, fr. ground
    4 Split-top Brioche hot dog buns, slightly cut on sides to create grilling surface
    4 Tbsp. butter (divided)

    Method:
    1. Chop or tear chilled lobster into semi-large chunks. Set aside.
    2. In bowl, mix mayo, celery, chives, lemon juice, lemon zest, old bay, salt and pepper. Set aside or put in the frig.
    3. In a large skillet over med. Heat melt 2 Tbsp butter. Add lobster and cook for ~ 2 min. until warmed through and buttery. Place in mixing bowl with mayo mixture.
    4. Wipe out skillet, melt remaining butter over med. Heat and toast buns on cut sides until golden brown.
    5. Pile lobster into buns. Top with additional chives if desired.

    Looks like an awesome recipe! We spent a summer in Maine 5 years ago and ate our weight in lobster. Lobsterman Mike would deliver live lobster to our door for $3 each. Made a lot of rolls like your recipe!

      We just got back from Maine about a week ago. The waitress at the first seafood restaurant said she liked the "cold" version, but then added warmed butter to the roll. I ate them that way for the rest of the week.

      I loved the fresh seafood, but by the end of the week, I needed a steak...

        Livin on the seashore is sweet.
        I make lobster rolls with just a bit of Hellmans real mayonnaise,a squeeze of lemon, and a touch of tarragon,,,
        S&P to taste but it’s a twist on the conventional that I enjoy

          Looks good. When I was in Massachusetts they would lay a lettuce leaf on the bread before topping with the lobster.

            My mother's family is from Bath, Maine. When visiting, we ate lobster all of the time. Years ago, the local McDonalds even had a lobster roll called McLobster Roll. I asked for a store poster as a souvenir but couldn't get one. Red's had great lobster rolls.

              Used to travel to the east coast on occasion for work. I still dream of lobster rolls and swordfish.....

                We did lobster rolls last weekend for an annual party we have. We did the hot kind. My wife is from the New Haven, Ct. area, so we get out there now and then and feast on them and the raw clams and oysters.

                  My wife is allergic to shellfish. But as I mentioned, when we were in Maine back in 2021 my daughters and I ate nothing but shrimp, steamed clams, lobster and fish. So good. I used to work in a seafood restaurant and had to shuck oysters and clams. Never been fond of raw clams.
