    Skinless Bone In Turkey Breast

    1 remove skin from turkey
    2 Cut back bone out of turkey
    3 Turn turkey back bone down smashed in the middle to spatchcock
    4 in a sauce pot add 1/4 vegetable oil, 1tsp granulated garlic, 1tbsp honey, 1tsp of turbinado sugar, and heat till dissolved
    5 inject turkey breasts
    6 pit your favorite rub on backside first then breast side and place in fridge for at least 5 hours
    7 pull turkey out of fridge and let come to room temp
    8 now heat up your Pit Barrel Cooker or other device. Mine ran at an average 315 degrees.
    9 cook until IT 160

    10 pull turkey breast a s let rest for 10 minutes.

    picture below shows my charcoal set up with the arbor fab minion starter ring filled with hot coals. Only light the coals inside the middle ring.

      @barefly I will share the secret to great color on your rub. It is virtually tasteless and is used for food color. It is a South American paprika spice.
