If you can't get Ro-Tel you can use a can of regular diced tomatoes and a 4 oz. can of diced green chiles, or you can use two cups of diced fresh tomatoes with 1/4 cup of diced green chiles, such as jalapeños.

I made this today with leftover smoked turkey. I didn't have a can of Cream of Poblano but I did have a 15 oz. can of Hatch brand green enchilada sauce. I added it with both cans of soup in the recipe above plus I used diced roasted green Hatch chilies from my freezer since I don't have a poblano pepper. Everything else was the same as written above. This is probably the best version that I have made yet!
