    Loaded baked potato salad

    fzxdoc asked for this recipe. Since it is a video, and not a recipe, I placed it here. If it belongs in recipes, please move it. There are 3 different recipes in the video, but it's clear which is the LBPS recipe. Or, you can go to 9:02 and skip the others.

    SWMBO does not like to eat unhealthy foods, but when I told her I was making this she said "Yum!" enthusiastically. We took some to her best friend, and she said it was the best tasting thing she ever put in her mouth.

    I did a write up about this Loaded Baked Potato Salad back in February. Here is my post.

    Saw this video on YouTube about Potato Salad 3-Ways and thought the Loaded Baked Potato Salad looked delicious so I made it Sunday. https://youtu.be/Xl0TTag8Gks 2 lbs. Russet Potatoes 8 oz.         RonB fzxdoc made the Loaded Baked Potato Salad yesterday for a BBQ we had and as I was making dinner tonight I did this.

        This might have been better than the salad was yesterday. All I did was patty up the cold left over potato salad and then cooked it up in a non stick pan. The cheese slightly melted and the mayo created a beautiful delicious crust on the outside of the patty. If you make this salad again you must try this with any leftovers.

          A question for ya:

          Is the potato salad moist? For me. it seemed to be a bit dry. It did taste great, but a bit dry, and the next day a little more dry...

          RonB it does seem to go a bit dry after sitting for a bit. If I eat it cold again I’ll mix in a spoon of sour cream and a spoon at mayo. Tonight the dryness helped. It pattied up nicely and held it shape as I pan fried it up.
