Jalapeno Scalloped Potatoes

In my quest to find a side for the ribs I'll be doing tomorrow. Yeah, it is for Sunday too but.. I found this on the Pit Barrel web under recipes. It's locked in.

that looks good... though I'd maybe do 2 more jalapenos or some charred rings from 2 of them on top before serving... I like a bit more heat though.

I'm a fan of heat. A sprinkle of a Flat Iron 4 Pepper Blend or if I dare Green Ghost would kick it up.

I received a gift pack from Flatiron for Christmas and have a bottle of their Hatch Valley Green. It has a wonderful smell and I think it would go well in this dish.

I use the hatch all the time on potatoes. It a calm heat compared to some of their other blends.

Looks like a winner, I might make this later today or tomorrow. I have some smoked ham pieces in the freezer, might add some of that also.
