Smoked butter?

    Smoked butter?

    Would it work to put some butter in a small aluminum pan in the pellet smoker at 150 for an hour or so? Gonna eventually wrap a pork butt in butter and wanted to maybe infuse some more smoke to it.

    No different than smoked ice... smoke, form and chill should have some flavor. I wonder if injecting smoked butter would have better results than smoking a butt and then wrapping with smoked butter though. I like this idea and may play with it.

      Smoke is a surface treatment. You won't infuse anything. Treat the pulled product with it.

        Maybe infused was the wrong term but I’ve had success smoking tallow, stirring it every so often, was wondering if something similar would happen with the butter. What do you mean by treat the pulled product with it?

        GreaseShirt You won't infuse the butt with any measurable amount of smoke, at least no more than what has already adhered. Save the smoke infused butter for the pork when you pull it, mix it in to moisten it up before serving.

      I think you can smoke butter. Tallow can be smoked. Go for it.
      I would also think the butter would separate in the process yielding a smoked drawn butter.
