    Duck Fat Spray…Questions

Having read a lot of glowing comments here about duck fat spray, I located some at my H‑E‑B today. I know you can spray it on chicken wings for extra flavor, and that’s what I’ll be doing tonight. Can’t wait to see how it tastes. I have 2 questions…..

    1. Do you spray it on the meat before or after applying your seasonings/rub? Or, is it better without seasonings on wings if you’re using the spray?

    2. Besides chicken wings, what else is it good on? Thanks!

You could spray it on your inflatable girlfriend to get rid of that squeaky sound.

I use it on asparagus and smashed potatoes. It would probably be good on other veggies as well

I like that idea! I might do some this weekend on my new OXO carbon steel grill pan.

Particularly good on potatoes (esp. fries) and/or (like FireMan said) pretty much anywhere you'd add flavorful fat or oil.

Ok, got a stupid question. I usually bake my frozen French fries, so that’s not a problem. If you sprayed it on French fries and then cooked them in hot oil, wouldn’t that dissolve the duck fat so you couldn’t taste it? Do you use the duck fat on French fries “after” cooking?

Not a stupid question at all.

I tend to cook fries in an air fryer or a convection oven ... and in both cases, just use the duck fat in lieu of some neutral oil to coat them.

I were to fry them like a normal person, I'd try pulling them out of the frying vat, draining them, then spraying with a little duck fat just before being salted. This would be the next best thing to frying them in a vat full of expensive duck fat.

Pretty much anything I want to add moisture too, I can add Duck fat. Unless I want real flavor, and then I add bacon grease....@Oak Smoke

I spray it on cut up potatoes before roasting or air-frying. I spay it on cut up veggies before they go into the grill pan. Any type of meat that's going into the air-fryer. Steak fries!

We're in France for a month, I made duck breasts earlier this week and saved the rendered fat in a jar. The classic use is for pan-fried potatoes, but the next day I was cooking them in the oven so instead of tossing them with olive oil, I used a little duck fat. Later in the week I used another tablespoon for chicken marsala. I wouldn't use it on fish, but I would for an omelet.

If you can’t find good jarred fat locally, this is a very good alternative online: https://www.amazon.com/gp/aw/d/B003H...b_b_asin_title

It's a great, flavorful spray. Good to use on savory sears in lieu of something like Pam Spray or even Ghee Spray. Love it on pan-grilled potatoes in one of those holey grill pans that RonB turned me back on to just recently.

I find it bit too overpowering on steak, though, and prefer basting with homemade beef tallow from a recent brisket cook instead.
