I’ve had halloumi and bread cheese, and I’m a regular user of queso fresco and queso blanco. I was in Sam’s the other day, and I saw a huge honkin’ 2.5 lb brick of queso de freir for $10.39.
What could go wrong? $10 is about 22 seconds in front of a slot machine. But this $10 has a better chance of offering decent value. There’s less volatility in this gamble, after all.

I don’t need any help frying this, there isn’t any magic I need to tap into. This is “slice cheese, fry cheese” stuff. But a quick web search says it is served with dipping sauces. So, those of you who have partaken of queso de freir, what have you served it with, or have had it served with? Most websites are showing guava sauce, mango, pineapple, etc.. That actually has me thinking along the lines of an Asian plum sauce or duck sauce.

I have brisket and ribs for the 4th, along with simple corn on the cob for less intensity/equal deliciousness. I’m thinking a nice plate of queso de freir would be a good start.
