Often eaten as a hot cereal.
Ingredients:
2 1/2 Cups yellow or white cornmeal
3/4 teaspoon salt (probably the fine stuff, I use 1 teaspoon Kosher)
1 1/4 teaspoons baking soda
1 3/4 Cups milk
3/4 Cup Vegetable Oil
Combine everything in a bowl except the oil and mix well.
Heat the oil in a skillet (typically cast iron) over medium-high heat.
When oil is hot pour in mixture and cook approx. 5 minutes to form a crust on the edges.
Once crust has set, lower heat, stir mixture, and cook another 15 minutes stirring occasionally to break up crust as it forms.
Serve with milk as a cereal or top with cane syrup.
I am out of cornmeal. Forgot I used it up frying catfish. So next weekend for this dish.
