Quick & Delicious Eggs On Toast

This morning I did this fun recipe inspired by something more complex by Claire Lower of Life Hacker. I made a slice of toast, buttered it, and placed it on a plate. Then I poured 2 tablespoons of REAL maple syrup into a coffee cup, cracked an egg, and plopped it into the syrup. I put the cup in the microwave for 30 secs on high, took a peak, added another 10 secs until whites were set, and poured it over the toasted bread. The yolk was runny, the white was firm, and the whole thing tasted like crunchy pancakes.

I like to toast a whole-grain slice of toast and spread 1/4 of a small avocado on it. Then I top it with a fried egg, a couple of tablespoons of cottage cheese, 1/2 teaspoon of chili crisp, and sliced scallions. Sometimes I add some black beans too.

Chile crisp is an excellent add to that!

Attjack Fly By Jing is fantastic stuff, all of their stuff. As far as I know David Chang has nothing to do with it, though.

This isn't what I described above it's just avocado and egg on toast with scallions. It's still good with the Mexican hot sauce but the Asian chili crisp really takes it up a notch.

I do the bird in a nest. Take a shot glass n cookie cutter out the center of a slice of bread. Mayo both sides. Into the C.I. Crack the fresh egg carefully into the hole. Flip when it gets close to your desired doneness. Quick n easy. Mayo works much better for crispiness.

Sometimes I do that too. I make mini avocado toast out of the cutouts.

All the time here, we call it egg in the middle, or toad in a hole.

I seen Claire’s recipe. It looks great. I have maple syrup… I have bourbon barrel aged maple syrup, actually.

I can’t do it. I can only have hard sugars on special occasions.

I was at the doctor today. My A1C is 5.7, and my weight is at 221. That’s 99. One more pound and I’m down an even 100.

Neat Trick! I love eggs over easy, but my wife just makes scrambled eggs. So we settle on making poached eggs on toast sometimes. This is a fast way to make an overeasy egg.
Now I just have to figure out how to add a 1/2 of a piece of bacon.

Mosca , first congrats on the work you’ve done, excellent man! Second, when I saw what Meathead & others have shown I always think with out the bread. The bread does ya in a lot more than a little maple syrup. Third, I either forgot what was third or forgot that there was a third. 🕶

I love the idea but I just can’t get comfortable with microwaving eggs. Just feels like I end up with a “bad” egg or it will explode on me.

I have been using the microwave less and less. Ours get used mostly when the wife heats up her coffee.

The only working microwave I have is actually in my outdoor kitchen. I'm not a microwave person either. I do use it to reheat rice, get a head start on potatoes before I grill them, or soften packed noodles for a stir fry.

I worry about the maple overpowering the whole thing.

So I precooked a 1/3 piece of bacon for 35 seconds in the mug first, then did the rest. Add pepper and just a little salt also.
It tasted even better, any meal isn't complete without bacon.
