    First time with plate ribs....

    I plan on cooking a 6# beef plate rib this weekend. Would prefer not to have to wait 8 hours or so before eating! Anyone have suggestions on speeding up the process? ie, increasing temp, or wrapping early etc.. I'll be using my PK 360. I can go either lump or briquetts. Thanks in advance for any ideas.

    Microwave it, or maybe increase temp to 275°.

      Increase temp to 275* and wrap when they hit the stall. That should get them done in 5-6 hours. You can also separate them into individual ribs before starting the cook.

        This is my advice as well. Although I prefer not wrapping until it hits about 170... but that means waiting out the stall. Stalls are much shorter at 275 than 225 though!

      If you were planning an 8 hour cook at 225, 275 will cut it to about 6.5 hours. The formula I use for estimating new cook time based on new cooking temperature is as follows. Divide the new cooking temperature into the old cooking temperature and then multiple it by the old cooking time. If you start in the morning the 6.5 hours cook time should allow you to hold an hour before serving. Big Moe Cason suggest for those ribs not going any higher in grade than Choice.

      You can easily cook plate ribs at 300 F. They have a ton of fat in them and they can take the heat. Wrap when you want, but make sure you give it enough time to build up that bark.

        I cut them into individual ribs and cook that way. Faster cook and more surface area for bark. 275-300F, they can easily take those temperatures.

            If you’re in a hurry I recommend Spinaker advice. At 300 F I can smoke plate ribs in 5 hours. I don’t wrap until 170F. The wrapped ribs will go on to 203 or what ever temp they get probe tender at quickly in a 300 F cooker.
