I apologize if this has been covered already.
I recently started using Rancho Gordo Beans. At first I would make the whole bag, 1 pound. I ending up either freezing most or throwing the rest out.
The last couple of times ( just me and my wife) I would make a third of the bag. A perfect portion.
I make it in a small sauce pan, 5 oz of beans, 1 qt of chicken stock and some seasonings. 3 hours later, perfect beans.

Ain’t mad at ya! Know that beans really do freeze well. I make my Lucky (enter year here) Black Eyed Peas on Jan 1 and freeze half for July 1. July 1st is when we assess our “luck” for the year 🤪🤪🤪🤓🤓🤓🫶🏻🫶🏻🫶🏻
This past New Years was the 1st time I did Black Eye Peas. We loved them!
I have three pounds in the pantry, we are set for several years.
I think I used the Homesick Texan recipe.
