    The other 40 year old bean recipe

    This is the other recipe on that page. It’s a pretty straightforward baked-beans-from-scratch recipe. It’s a good place to start, I think.

    1 lb dried navy beans
    6 cups water
    1 1/2 tsp salt
    1 tsp dried mustard
    1/2 tsp pepper
    1/2 cup chopped onion
    1/2 cup molasses
    1/4 cup brown sugar
    1/4 lb cubed salt pork

    Prepare beans. Drain [and reserve!] liquid. Mix in other ingredients and pour into a 2 qt casserole with tight lid. Cover with bean water. Bake covered at 300° 3 1/2 to 4 hours, stirring occasionally. Add boiling water as necessary. Click image for larger version

    I insist on using beans younger than 40 years.

      This was awesome! Thank you. I soaked the beans overnight in about a gallon of water. Poured the beans into a strainer in a pot to save the water from the soak, mixed the ingredients in the pot with the beans, then poured enough of the saved water to cover the beans. Had to add about 3 cups more during the baking.

      The simple recipes are the best, IMHO.
