    A hand written bean recipe from about 40 years ago

    Where the heck I copied this from, I don’t know, but it looks really good, and doesn’t match anything else I’ve ever seen. It was folded in one of my cookbooks from the early ‘80s. I’m not sure I ever made it, but probably just copied it and forgot about it. But it looks pretty worthwhile.

    1 cup dried kidney, pinto, cranberry, or chickpea beans
    5 cups water
    1 cup diced carrots (1 medium)
    1 cup diced celery (1 stalk with leaves)
    1 cup diced zucchini (1 small)
    1 cup diced Muenster cheese
    1/2 cup mayonnaise
    1/4 cup sour cream
    2 tsp finely chopped green onion
    1 tsp Dijon mustard
    salt &pepper
    3 cups raw spinach leaves, romaine lettuce, or Bibb lettuce

    Cook beans in water. Chill. Combine solids. Combine liquids. Top leaves with solids and pour liquids over top.

      Yeah, I’ve been trying to imagine how it tastes. Mrs B doesn’t like chunks of carrot, so I would grate that. It just looks like it’s missing something, like acidity maybe? Not sure if the mustard would cover that. And, all those beans taste really different from each other.

    I agree, Mosca , it looks like a chilled bean salad that needs a bit of acid added to the dressing ingredients. To me it looks like something you'd make with fresh or frozen peas instead of beans.

    If you make it, let us know how it turned out.

      Yeah, just like today: people are paid to fill column space, but that doesn’t mean it tastes good!
