Where the heck I copied this from, I don’t know, but it looks really good, and doesn’t match anything else I’ve ever seen. It was folded in one of my cookbooks from the early ‘80s. I’m not sure I ever made it, but probably just copied it and forgot about it. But it looks pretty worthwhile.
1 cup dried kidney, pinto, cranberry, or chickpea beans
5 cups water
1 cup diced carrots (1 medium)
1 cup diced celery (1 stalk with leaves)
1 cup diced zucchini (1 small)
1 cup diced Muenster cheese
1/2 cup mayonnaise
1/4 cup sour cream
2 tsp finely chopped green onion
1 tsp Dijon mustard
salt &pepper
3 cups raw spinach leaves, romaine lettuce, or Bibb lettuce
Cook beans in water. Chill. Combine solids. Combine liquids. Top leaves with solids and pour liquids over top.
