    Blueberry Cream Cheese Biscuit Bombs

    We made these as part of breakfast when I went to Mason Dixon BBQ’s Ribs and Chicken Class. They are extremely easy, and absolutely KILLER. You can obviously substitute in apple, strawberry, cherry, etc.


    Blueberry Cream Cheese Biscuit Bombs

    Ingredients:
    2 21oz Cans Blueberry Pie Filling
    1 Pint fresh Blueberries
    1 1/2 teaspoon Lanes Blueberry Muffin Rub + more for “dusting”
    2 (12)oz Whipped Cream Cheese
    3 (8)count can Grands Country Biscuits
    8 tablespoons Butter
    Powdered sugar as needed

    Directions:
    1. Preheat the smoker to 350°F.
    2. Line a baking sheet with parchment paper (not required, but helpful).
    3. In a bowl combine Whipped Cream Cheese and LANES BLUEBERRY MUFFIN Rub
    until well combined
    4. Split all of the biscuits in half and place the bottom halves on the prepared
    baking sheet, about 2” apart.
    5. Spoon about a tablespoon of cream cheese mixture onto each biscuit.
    6. Spoon about a tablespoon of the blueberry filling on top of Cream Cheese.
    7. Add fresh blueberries as needed
    8. Take the top half of the biscuit and press the edges to seal.
    9. Dust with additional LANES BLUEBERRY MUFFIN Rub
    10. Reserve any leftover blueberry filling and fresh blueberries for serving.
    11. Put baking sheet onto smoker and cook for 15 minutes or until golden on top.
    12. Optional: Place butter in a small saucepan and cook it over medium high heat
    until it melts, starts to crackle, and smells nutty DON’T BURN IT!
    13. Brush the browned butter over the biscuits
    14. Sprinkle liberally with powdered sugar
    15. Serve with remaining blueberry filling and fresh blueberries.

            They are stuffed with the stuff that’s on top, too. I’m going to give these a test run in the next week or so, and a smaller batch will mean more topping/filling:biscuit ratio, so they’ll probably look more like something you’d find at Krispy Kreem!

            Mosca, those look fantastic! Maybe you should send me some to try before you serve them to your Family. A full pan would probably ship better. Yum.

              First go through: the tablespoon of each filling is WAAAY too much, you can’t make a decent seam. Use about half that.                   Okay, more notes.

                  1) Half a tablespoon of rub for 2 dozen biscuits isn’t nearly enough. Use about twice that. It’s just sugar and blueberry powder. The biscuits aren’t quite sweet enough otherwise.

                  2) The instructions say to put the cream cheese mixture in, then the blueberry filling. No. You’re going to have to mix the blueberry filling in with the cream cheese mixture. I went back and checked my photos, that’s how we did it in the class. Otherwise it is still runny at the end, and even a good seam gets broken.                   3) Following up on the previous note, you can see that the TOTAL filling for each bomb is about 1 tablespoon, not the 2 tablespoons you would have by following the original recipe.

                  Otherwise, it’s pretty good, as good as I remember.
