Congratulations on the Instant Pot. Besides being a Pho making monster, I have been doing small batch canning with mine. 2 min pressure sterilize the canning jars/lids then a 15 min steam. No big pots of boiling water etc.
One more - any kind of bean soup goes great in an IP!

Attjack how do you get the diacritical marks to appear in your English keyboard? Pretty cool.

On my Android phone, if you long press a key a bubble lots up with several different characters you can select from which include versions with the diacritical marks. That said, I can't get the particular version of "o" so I'm probably wrong. Another way is to copy and paste: Phở Gà

I'm thinking that on a laptop or desktop you can use a character map to get the special characters.

The easiest way is to search for your term using regular western characters and find a search result with the desired diacritical marks. Then you can just copy and paste.
