The gastroenterologist has confirmed that Nan has Celiac disease. That means no gluten. I have been making Chinese 4 or 5 times a month for years, however, most brown colored sauces have soy sauce in them, and soy sauce contains gluten.
As far as I can tell, I need to avoid most of the sauce ingredients I have been using, so I'm looking for gluten free recipes from the members here. I do have several, but would appreciate any ideas members can offer.

you can get most of the sauces (soy, oyster, teriyaki, hoisin) from the big name brands in a GF version. I have not been able to find light and dark type soy sauce, so I just use regular GF soy when it calls for the two types. Sherry Cooking wine is my sub for shaoxing, as it has gluten from the soy.
But here are the four sauces I have on hand at all times that are all really good. I would be curious if someone would be able to tell the difference in a side by side taste of final dishes.
As for recipes, it’s pretty easy to sub out these days compared to when i first started cooking GF about 17 years ago for my wife. I’ve been GF for about 10 years now and actually feel much better when it comes to gut health for what it’s worth.
I’ll create a list of the various GF websites I have and other GF brands/resources and will list them here or send via message. But let me know if there are specific items or recipes you are looking for and I’ll get those to you as well.
Hope Nan gets to feeling better with the food change. It may seem a bit overwhelming at first, but it will be all good. There are so many great foods that you would never know are GF - bread, pizza, whatever. There is great stuff waiting to be had for meals!

Role with a good Tamari and that’s most of the battle. Lots of citrus (Yuzu) and don’t be afraid to mix and match like a Kroger sale.
Add wines, vinegars and sugars to Asian recipes. it is not all have to be Asian ingredients they they are delicious.
Celiac here. Just want to piggyback on barelfly ’s comment. It does seem overwhelming at first, it’s a big lifestyle change. That freaking gluten protein gets used in all kinds of places. Expect to see health improvements within a week or two of going gluten free. Look for small distinct improvements, not a 100% instant cure. Also expect the “going gluten free” to be gradual as well. Labeling on food is becoming better, but as a Celiac you’ll need to check other things also…medicines, toothpaste and deodorant…just remember that going gluten free and it’s connected health improvements is a process, not an event. I’ve only seen gluten free dark soy online in larger bottles (half gallon). Lee Kum Kee brand is pretty good. Woks of Life has a recipe to approximate dark soy from regular and some sugar. They also have some gluten free recipes. You can find Kikkoman gluten free soy sauce and oyster sauce in most grocery stores. I’ve found tamari to have a different enough taste that I try not to use it. Shaoxing wine can have wheat used in the fermentation so I’ve always used dry sherry as a substitute.

Publix uses color-coded labels on its shelves to show different food preferences. If you’re looking for gluten-free items, just find the purple square. Some other stores might be starting to use similar systems, too.
