Often times I have a hard time finding lemongrass at the supermarket and when I do it's typically pretty expensive. So instead I pick it up at the little Vietnamese market I like to shop at. Like many Asian ingredients, lemongrass is far cheaper there. I grabbed an entire bunch when I was there a week ago and I don't even have a specific plan for what I'll be using it for. So I need to preserve it until I have a use for it.
Lemongrass freezes beautifully. Trim both ends and run your knife down the entire length of lemongrass and then peel away 1 or 2 of the outer layers. Throw the stalks on a cookie sheet making sure they do not touch each other and toss the whole thing in the freezer until frozen. Once frozen, transfer the lemongrass to a sealable container such as a freezer bag until you need some.
