I’m sure most of you have more zucchini than you know what to do with at this time. Here’s a great BBQ side dish.
ZUCCHINI CASSEROLE
8 cups cubed zucchini
1 medium onion
1 stick butter
12 oz stuffing mix
1 can cream of chicken soup
1 cup sour cream
1 cup shredded carrots
8 oz shredded cheddar cheese

Melt stick of butter and pour over stuffing mix in a large bowl. Add cream of chicken soup, sour cream and carrots.

Mix until well blended.

Cube up zucchini and dice up onion.

Add the zucchini and onion to salted boiling water and let cook for 5 minutes. Drain well.

Gently fold zucchini and onions into the stuffing mix in a baking pan.

Bake at 350° for 35 to 45 minutes.

Top with cheese and put back in the oven for about 15 minutes.

Cut squares and serve with some BBQ. I did with ribs.
