    Rueben Dip

    Making this dip would be worth cooking a corned beef! Bet it would be tasty cooked on the smoker too!

    Rueben Dip

    1/2 cup mayonnaise
    1/2 cup Thousand Island dressing
    16 ounces sauerkraut, rinsed and squeezed dry
    8 ounces shredded corned beef
    16 ounces shredded Swiss cheese

    DIRECTIONS
    Preheat the oven to 350 degrees Fahrenheit.
    In a bowl, whisk together the mayonnaise and Thousand Island dressing until well combined. Set aside.
    Spread the sauerkraut evenly into a 9×13-inch baking dish. Layer the corned beef, Swiss cheese, and mayo dressing on top.
    Bake it for 20 to 25 minutes. Serve the dip hot with crackers, toasted bread, and/or chips.​

    Thanks for this. I'll probable make some, and some pastrami, this weekend. This would be excellent on a pastrami sandwich...

    We make a similar dip, always goes over well. Last month I used it to win the dip challenge at work. The leftovers are excellent on top of a left over baked potato for a lunch....

    On the same page for the leftovers Saturday, jut picked up the rye bread this morning. Weather forecast up to 5 inches if snow, we have blue skies and sun. Once again you couldn't get it even close.

            Sounds Great. We do something similar.

            Grease a casserole dish; spread white-meat chicken evenly on bottom (I actually prefer the chicken tender / back meat, if you use full breasts, you may want to slice them into thinner chunks); cover with kraut, swiss cheese, and 1000 Island (the order isn't particularly important); bake one hour at 350 degrees (or so); serve over rice or biscuits.

            I believe my grandmother got this recipe out of the electric bill.

              CandySueQ my mind went to a Reuben sandwich with the corned beef braising liquid as an “au jus” to dip the sandwich in. 😉
