So YES!!! Finished putting my Pit Boss together. Ready to Christen it tommarow night after work! This was a Christmas present from my Dad who says he has never had smoked BBQ as good as mine in his 67 years. I'm sure hes partial but still a huge compliment. He wanted to buy me something that would continue my quest in the world of Smoked BBQ. Thanks for the comments. And whether this pellet popper can be a set it and forget it or not, doesnt matter to me. I hang out during my cook and enjoy the smell and watching the stages the meats go through. I appreciate the warnings about all of the possible break downs that can occur. I know what to look for and will be on point!

6. You have to make sure the meat is always over the deflector shield, if not, you can burn the overhanging meat, and grease will get down in the pit and collect there. It makes a mess, and could start a fire.
This is spot on and I don't think many people think about it. The space on my first REC TEC was 680 sq. in. but actual usable space was closer to 580 sq. in. Thats a big difference and has to be accounted for. Without rib racks you could (barely) just fit 4 racks of st.louis style pork ribs on the smoker.

Everything I own is fan controlled and similar that I usually can not worry about it. But check occasionally. It’s nice to cook overnight and not have to get up unless your phone tells you something is wrong. I can go 12-20 hours on a single load of coal/wood in my pk360, depending on outside temp and how loaded it is and what charcoal I’m using (less ash production allows for more time before cleaning is required)
Plus if the fan controller fails you can pull the fan and go with manual vent settings to finish the cook.
Apart from that I’d have to agree that pellet or fan controlled allows many people to make good food who have other creatures to babysit constantly rather than a pit.
