      LOL, That's one way to put it. I wanted to call my son every 10 minutes and ask him when he was going to get here. I kept finding things to do to take my mind off the grill. Wore a nice trail on our carpet walking back and forth to the window to check if he was here.

      Beautiful!

      While I always read that you should season a smoker with something fatty like chicken or a Boston butt, not sure it really matters. I would be impatient to smoke something, and would probably do some ribs or Boston butts to get it broken in myself.

                  Only seasoning I did on my 640 was to spray the inside (all over) and grates with cooking oil (I used canola). Then just did the initial burn at 350 for about an hour.

                            Congratulations on the new rig ! With the constant wind in western NE your neighbors 5 miles away are going to be jealous. I did a pork butt as my first cook after the burn in, but before that I did the biscuit test - take a can of refrigerator biscuits and spread them out and cook like the instructions say. When you flip them over you'll get a good idea of where your hot or cool spots are. I think CandySueQ suggested that using bread (toast) would do the same thing. Happy smoking sir.

                              I'm thinking some ribs. I did a couple italian sausages last night just so I could use it. They turned out great!
