          Awesome smoker - I never heard of them during my search for a pellet smoker; by the looks of that chicken it really does the job. Hope to see more of your cooks and details.

            Troutman, I am strongly considering the Maverick to scratch my own MCS itch. Down to this, the Yoder and a Silverbac. The one thing keeping me undecided are your multiple comments about there not being much smoke profile on the product of your bbq. Have you been able to resolve this and are you still a fan?

              I am leaning toward the Yoder as well, it does not have a PID controller, It is proprietery and supposedly has a better smoke profile.

            I typically run my Camp Chef on "High Smoke" for at least an hour when I cook. You may want to try cooking at 210 for an hour or so, to get the smoke taste set. Meat Head states that when the food drys out, you won't pick up any more smoke flavor.
