Not sure if this is the right place, as it’s not cast iron, but I don’t remember seeing a carbon steel section.
also it is M’Steel, not M’Metal if a mod wants to correct.
For the last 2 years I’ve looked off and on for a Carbon steel pan, I have a carbon walk & paella pan, so, I’m pretty familiar with seasoning and care, but I could not pick out a pan that I really wanted.
Of course hang around here long enough you will see people buying cookware, so I’ve been patient in purchasing. Hulagn1971 first got me enthused again when he purchased Made In pans, and Made in took care of him and his pan warping a bit. So they definitely made my short list, and then ecowper recently shared a photo and a review of de Buyer carbon steel, I had not heard of that brand before, and it seemed there was a strong following here.
I know Kenji always gives fare reviews of pans, and it was of no surprise that the brands mostly were familiar names with anyone around here. Then I saw this little note, saying something like Mauviel was his favorite brand, however it is always sold out so he did not include the review. I went checked Amazon, and the Mauviel website snd yes, sold out. So I really knocked it off my radar. Then…. Right around Black Friday the pan was available, I did a quick dive down their reputation , specs, one thing I liked was it can be used up to 685, which means I will never even get close to the heat threshold. It may be a bit heavier than most brands, and thst likely plays into it.
it arrived Friday, and yesterday I finally got to bake the beeswax off of it, and then I oven baked the pan slowly building up to 520 degrees, over a period of 3 hours, including an hour cool down. When I took it out it was beautifully blued. I did 2 seasonings in the oven yesterday using a Crisbee puck (I love those things), and the one more seasoning this morning. Went straight to the egg test, a bit of butter down and that egg was sliding all around the pan.
I went into this only wanting 1 pan, and now I want a few more of their pans.
this pan cleans, blues, and seasons so incredibly well.
