Steve B I'm going to try for sure. But, 'Hey does anyone want to work 4 extra shifts this week, oh and they're all night shifts' is not going to be an easy sell. Rest assured I'll try...if I have 48 hrs of vacation time that is. I have hurdles with this one.

This will be a great time. I think a seminar on breakdown of a whole hog would be very informative. Especially focusing on BBQ cuts.
I like the idea of taste testing and showing off different cookers in action. I am not sure where we could set this up, but this would be a blast for everyone.
Another thing that would be cool would be a Memphis-BBQ tour. Maybe that is what the bus tour on Sunday is. But I would like to see a bunch of the famous BBQ joints in Memphis. Eat some great que, listen to the blues and hang out with my fellow Pit members. Sounds like a great MEAT up to me!!

How about knives, sharpening, and maintenance? I have several contraptions that give mixed results, but not what I get from the sharpening shops.

The more I think about it, the butchering idea, the more I like it. Probably not whole animals, for me anyway. But maybe stuff like getting one of those huge 30+ lb chuck rolls at Costco/Sam's, and how to effectively cut into many roast. Or removing the gland from the lamb shank. You know,... Tips and Tricks.
