After trying to make one of these things for years, I am here.

Wow this is a nice hotel (and I spend a lot of time in nice hotels).

No, I stayed home. Time off, funds, various factors. Plus being kind of a homebody.

Unfortunately acorgihouse wasn’t able to make it this weekend. A family issue arose at the last minute. Hopefully she can make the next one!

Every thing on this plate was great, but the shrimp were amazing. Wrapped in bacon and drizzled with a lime-cilantro chimmichurri-style sauce.

Also, I will never buy inside skirt steak again. Outside is where it is at!!

If I made a vow like that, I would likely be condemning myself to an existence without skirt at all. I have searched high and low and have yet to find anyplace that advertises skirt as inside or outside - which means what they're selling is definitely the lesser variety.

We all ate dinner tonight at La Cocina De Roberto. General consensus was the food was excellent! I had some kind of mini, 5 taco platter that was served with a side of charro beans. We also had a few different appetizers that were passed around. Lemme tell ya folks, it wasn’t just me, but everyone talked about how great the food was….everything. Not just 1 or 2 items. The Charro beans they served were some of the best beans I’ve ever had! Even that grouchy old bastard Uncle Bob said the same thing. Just an all around excellent meal.

My lunch today at Tejas was pork belly aka white brisket, slice of fatty brisket, a chile relleno sausage and a real Mexican Coke. Excellent! The owner gave all of us a private 45 minute tour and answered everyone's questions prior to opening his smokehouse. Excellent experience.

Bacon Coleslaw is yellow. Never seen yellow coleslaw before. Mustard based dressing?
          Was it good?

Carolyn - The Cole slaw was indeed good. Not sure why the dressing was yellow … but it didn’t taste mustardy at all.

We all went to Tejas Chocolate + BBQ today for lunch. I experienced pork belly for the first time today! Ashamed to admit it but I’d never had pork belly before…😳 I ordered 1/4 lb. of fatty brisket, turned out to be 1 slice, 2 pork ribs, 1/4 lb. of smoked pork belly and 2 links of chili relleño sausage. The sausage and pork belly were freakin’ awesome! Brisket and ribs were right behind em….😋 My sides were coleslaw [meh] and a bowl of pintos, pretty good but needed a little something added to em, some brisket pieces and a little jalapeño would have put em over the top! There’ll be more added about this but, but the owner Scott Moore, couldn’t have been nicer! He gave the whole group a tour of the place that lasted about 45 minutes! Mosca and 58limited will probably add more about that later. Scott knew all about Amazing Ribs too. He told us he used the free side in his beginning days of learning BBQ. He actually bought a WSM based on information he learned from using AR.

I could echo Panhead John's post word-for-word. I had read his 2021 review last night to get an idea of what to get so I knew I was going to get that chili relleno sausage. Absolutely spectacular. Granted, I haven't eaten a great deal of sausage outside of the grocery store stuff, but it easily, without question, was the most flavorful sausage I have ever eaten. Just outstanding.

The pork belly surprised me and this was the first time I'd ever had it as well. Incredible. I was expecting it to be heavy, overly fatty, etc., but it wasn't. The owner, Scott, described it as a white brisket and it literally is that. It's like what white chocolate is to milk chocolate.....same....but different.....but delicious!

When we were leaving I complimented the owner on the pork belly and he said they sometimes make a bahn mi with it....and that sounds divine. In fact, I've had a 3 lb slab of pork belly in my chest freezer for months and haven't decided what I wanted to do with it. I think I just found out what I wanted to try.

Also had the pork ribs which were good (why can't my ribs ever turn out like this?).....I also had some of the beef rib which was quite good....very barky. Brisket was excellent.

As John said, Scott was exceptionally generous with his time.....he gave us a tour of essentially the entire place, including the chocolate side. And listening to the "business of barbecue" was utterly fascinating....his connection to Amazing Ribs was completely unexpected and very, very cool.

I had the brisket tacos with sliced point . They offered an interesting twist with lime covered with Tajin to squeeze on the brisket. I really liked the combo. Forgot the name of the sausage, but it was very good.

We got one today while at Tejas. Tom will probably be posting it soon. When we were taking the picture, several people stopped and asked us if we were from Hollywood….🥸 One lady asked if I was a Chippendales dancer.
