First Texas MeatUp In Houston Is Finally Here! April 2025
Finally, the MeatUp weekend is almost here. Mosca came in today and is ready to get the post going with some pics he took today. The rest of us will be here tomorrow to get the weekend started. Luckily the Spring,Tx police force ain’t that big, so we should be able to get away with more than we usually do. I’m thinking Saturday night I’ll throw some stink bombs inside the local Dairy Queen, that should divert most of the cops away from our activities. 🥸

Flight from AVP was uneventful, except the guy with the snacks didn’t have any Biscoffs. So I asked if he had any and…
He came back with SEVEN. (I ate two.)
Feet down in Houston! Bags were supposed to come in on Carousel #1. Uh oh. No bag… Oh, wait. There it is, circling over on Carousel #2… 🙄
Rental car has only 326 miles!
Dinner at Mexican Mom’s. Nice place! Beautiful inside, very artsy-hippie Southwestern. I got a poblano queso empanada
and carne guisada
The plate looks like the one on the website! The poblano queso empanada estuva muy rica. The carne guisada was also excellent. Of the two, the empanada was better. The guisada was damn good, though.

The rooms are nice. By the layout of the hotel, I don’t think they’re all the same. They’ll all have the same stuff, but the layouts are going to be different. Everything is clean, nothing seems worn or run down.

I checked into hotel, flight, and airport parking. Just woke up and looked at phone, several messages about niece's husband. In ER, something cardiac. My flight at 9 (11:46 here now.) I may have to delay, going to try to sleep a bit more before I get details..

I took a quick look at the free breakfast. Pretty standard stuff. 7AM on a Thursday, nobody there. But I was talking to the desk agent and maintenance guy, they said the cook makes pretty good breakfast tacos on Friday, with a special crema sauce.

But today I got bigger plans: La Cocina Taco House, on Farm To Market Road! (NOT the same as La Cocina de Roberto.)
Walk in, and it’s counter serve.
The very first thing, before you order but after a friendly exchange of pleasantries, is, “Corn or wheat tortillas?” Which they make behind that little window in the back, and they come out by the dozen in quilted tortilla warmers. Then, you pick stuff from the choices.
We talked breakfast tacos for a few seconds, and I admitted to being overwhelmed with choices, so Mario just said, “Tell you what, I’ll make you a breakfast taco that you’ll love.” Which, it turns out, was an accurate prediction.
The top is chile verde pork with refritos, the bottom is refritos, seasoned eggs, breakfast potatoes and cheese. Estuvo riquissimo!
I liked the tables. Pero no me gustan las arañas.
Not pictured: cafe de olla, coffee with cinnamon. I think I’m going to just start making my coffee at home with cinnamon, it is so good!
I will tell you this: my breakfast tacos are on the right track. I wouldn’t back down from this comparison. I should be making my own tortillas, and I keep putting that off. But as soon as that’s accomplished, I’ll stand next to anyone.
I’m back from an excellent lunch at Corkscrew BBQ. Some brisket, I got the lean to keep my doctor happy, jalapeño/cheese sausage, sweet and spicy coleslaw, and smoked beans. The beans were good. They were also the low point of the meal. The slaw kicks butt. I practically licked the container clean. The brisket was very tender and tasty. The sausage was what you’d want in a pepper and cheese link, but you so rarely get.
Of course, I over ordered and wound up with a slice of brisket and a whole link left over. If any meat up attendees want a taste, let me know.
