Last night…..well, let’s just say it wasn’t quite as rowdy as Friday night. Everyone was a little more subdued, well, except for this one guy. We ain’t mentionin’ no names. We were so full of brisket, ribs and sausage, some of them were in a food coma. And this includes Snow’s brisket, Brett’s Backyard and a brisket from Beaumont that 58limited brought with him. 58limited laid out 2 briskets side by side for us to sample and give our thoughts. 8 of us each sampled both briskets and a few of us tried them in a blind test without knowing whose was whose. The results might surprise you.
Because Troutman does the best job of anyone here writing reviews and what not, later on today he’s agreed to post a review of Brett’s Backyard as well as his thoughts on our 2 briskets we ravenously consumed last night for dinner. There will be plenty of pics posted, as well as our little group’s opinions of what we ate in the room.

Some pretty serious camaraderie going on there. Well, maybe not serious, but definitely camaraderie. I'll post more complete thoughts later, but this was absolutely worth the effort to make the trip down here!

Great camaraderie with everyone all weekend. The only time things got tense, was when I lost the Friday night pillow fight to The Captain. In my defense, he didn’t play by the rules. Troutman warned me he fights dirty.

The rest of the folks have hit the highlights very well here, so the comments to come about the various bbq delights we enjoyed from Troutman will be an excellent wrap of the food experiences. As for the comradery, CaptainMike nailed it. This is a fabulous bunch to hang with, even Panhead John, once we were able to slip a Xanax in his ever present glass of Black Jack at the top of each hour. Speaking of which, he tried a sip of the 102 octane Clyde Mays small batch we had Friday night and didn't like it at all.............same reaction as the gals, so that should tell you something about his manliness. Good news in that was that Steve, Mike and I had more to enjoy for ourselves.
Great venue, relaxed vibe the whole weekend, good friends who were able to extend online relationships to in person expansions, and of course........the food. But then what would you expect from Texas BBQ baby? If you missed out on this one, enjoy these comments here, and anticipate the next gathering of the faithful................it's worth every second you participate.

Even though Uncle Bob has "stretched" the truth concerning my opinion of the Clyde Mays, we got along swimmingly well. I thoroughly enjoyed his company and am really glad to finally meet him. A lot of people don’t know this but……. He might seem very intelligent and articulate online, in real life, he’s a damn hillbilly. Things did go off the rails Friday night, fortunately it wasn’t for anybody in our group. Julia and I had a great time meeting everyone and eating BBQ frome some places that are on our regular list and finding some new places for the next time we are in that part of the state.
looking forward to hearing about the rest of captain Mike and WC Prestons adventures on there trip.

TxF I appreciate you not letting on, as to the truth behind this pic. In reality everyone…. that’s Uncle Bob ‘s truck. He ran outta Boone’s Farm Saturday night and asked me to drive him to the liquor store. I obliged him, but on the way back, Bob flicked his cigarette butt at me and I lost control dodging the wayward butt. Hey, a BBQ joint called Texas BBQ opened up close by. Maybe next year the California Delta can replace Texas as the destination!
A good friend of mine tried the place out and really liked it. So I gave him about a pound of my pulled pork and told him "Try this." Mine won hands down...............so maybe replacing Texas is a ways off.

I (most of us) can turn out a pretty dang good brisket, even better, perhaps, than a couple of the places we went to. But there were a couple of places that were pretty unbeatable. And none of them were in California!Last edited by CaptainMike; June 6, 2021, 03:53 PM.

smokin fool The Cap’n was right. We had a discussion about how many great members there are here and several names came up. We mentioned yours and some others. We all thought youda fit right in with us this weekend and contribute a lot to the laughter we shared. I just needed ya on my side for the pillow fight. Bet you can swing a mean pillow!

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Sadly, I knew from the time discussion of doing this started that I wouldn't be able to go. A group of foodies that had been getting together regularly for a couple of years before the pandemic planned to get together tonight to celebrate being able to do such things again and to welcome our founder of the group who is visiting after she relocated to the Pacific Northwest. I'm stretching the fresh Florida theme by smoking a brisket and making burnt ends. At least the brisket came from the UF meat market. I just chopped up the point for the burnt ends, so here's a porn pic of the point after slicing. (Yes, I sliced the wrong direction if I had been serving as slices. But this was just an interim step leading to cubes, so I paid no attention to the grain.)
I can at least pretend I'm in Texas while eating parts of the meal tonight. I will be watching closely to see if plans develop for the Fall and will do what I can to make it there.

I wanted to thank everyone who not only turned out but pitched in and provided for a great group experience. These things never turn out exactly the way you think they will but all in all it was a great success. Be looking for future dates, possibly as early as Fall 2021.
I also want to thank everyone who brought food, tent shelters, bbq pits, booze (great booze !!) and a friendly meet and great attitude. It was a good group who meshed well. Panhead John chose the right venue and we enjoyed crashing his suite where we ate, drank, talked and had a tremendous time. Gratefully the otherwise Texas spring monsoons held off and we actually were able to enjoy the outdoors.
I'm going to post a couple of reviews here later on that I hope you'll enjoy. Central Texas barbecue did not disappoint nor did the atmosphere that everyone enjoyed. Looking forward with great anticipation to our next meat-up, where ever it might be.

+1 As much as I enjoyed the great BBQ and steaks, I enjoyed the friendships formed even more! It was a real treat to finally put a face and real human being to some of those avatars. Thanks to everyone who took the time and effort to make our meat up a rousing success. I concur with Steve and I’m sure we’ll do another one in the Fall.

Now that Troutman has finished his excellent write ups about Brett’s Backyard BBQ and our experiences with Snows brisket and one from 1701 BBQ in Beaumont, I wanted to show the pics here as well. Talk about the generosity of our pit members! 58limited on his own dime, purchased 2 briskets for us to sample….devour actually.
Since most of us didn’t really feel like doing the 4am wake up call for Snow’s, Loren picked up a brisket for 58limited while he was there, and 58 reimbursed Loren for the cost. The 8 or 9 of us remaining gathered in my room for the food coma to come Saturday night. The pics shown below are of Snow’s brisket and the one from 1701. The consensus among us was that these were both top notch briskets and some of the best we’ve ever had. I thought Snows was absolutely the best I’ve had, a great smoky flavor but not overpowering smoke. I had cuts from the flat and point, both tender and juicy. My thoughts of the 1701 were it was also a stellar brisket, with a peppery bark, maybe just a tad too peppery….but still excellent. Left side brisket is Snows. I wonder if I would have liked mine more if it was cut properly. I'm editing my Franklin video for today, and I think his was better than anything I've tasted so far. But I also wonder if I just got a bad brisket from Snow's and you got a better one. They are natural products, after all. But I really hate the way they cut it, though.
