I’m glad the short ribs were sold out, it made the decision easier. A 13lb (avg) USDA Prime strip loin for $158 is a damn good deal.
I hate to say it, but my thinking was influenced by the pandemic. Things might go sideways fast. If they do, I’ll have more protein. If they don’t, well, I’ll have more protein.Win-win.

I'm always intrigued by those but have never had the space to keep it. just got a small (5.1 sq ft) chest freezer for the garage last week, so the one thing that was preventing me from spending the money on a full strip loin or ribeye is no longer a factor. We'll see how long I can hold out. A full strip and a pack of tri-tips would make a nice addition to the new freezer, joining one pack of their short ribs I have leftover from their last sale.

It looks decent. The meat is a nice dark red. It was fat like a brisket, but at that price I'm okay. I was in a hurry so I trimmed the fat and left the silver skin on. We already have chicken on the menu for tonight, so I kept out a couple steaks for tomorrow and froze the rest.

There are a lot of videos on how to break down a strip loin, but I really like this one. I used my cleaver, and did some small steaks for Mrs, some 1†for common eating, and some 1.5†because they are fun.
That strip loin looks great. Looks like more marbling than the prime strip loins I’ve gotten at Costco. I got lured into the whole boneless rib loin on special at Creekstone. I’m hoping to get 3 prime rib roasts out of it, but would still be happy with two and a steak or two after.

These are good. They have a nice meatiness to them, that differentiates them from supermarket steaks. Very flavorful.
I cut 2/3 of the roast into 8 and 10 oz portions, and the other 1/3 into 6 oz portions for Mrs Mosca. Inch and a half steaks are great, but you shouldn't eat a pound of meat every meal. I bought the whole loin for dinner meat, not special occasion meat.
They're sold out right now. Figure they'll be back after the new year, the rib roast was gone for a month and now it's back.
