SheilaAnn I’ve been looking at Fulton’s or All Fresh Seafood to replace Sitka …. You know much about either?

SheilaAnn they both look promising. I'm going to do small test orders to see what I think.

STEbbq All Fresh Seafood can source Frozen At Sea Sardines that I can trace all the way to the boat. Going to try them out first. Fullerton’s is the oldest fish market in Manhattan. They have some interesting stuff, too. Will order some from them, too. And then I will post reviews of each …. Pictures, what I cooked, impressions, etc.

ecowper You mention replacing Sitka. What is going on with Sitka that makes you want to replace them?

Sitka has transitioned to being a reseller, not the original source. They used to employ all the boats and crews and only source from them. So, you could trace the fish from catch all the way to your door. Now, they don't have direct control on the catch, boats, or crews. I willingly paid a premium for their original model, but am not willing to pay that premium for this new model.

My daughter in law lived next to the owner, Riley Starks, as a kid. He used to own The Willows Inn. She describes him as a good guy, good fish. Sustainable reef net fishery. She has no experience with delivery. DIL is in her 40's.

I have never tried Lummi, but per ecowper question, I have used All Fresh Seafood a few times. For same reason, I had ala plancha sardines in a Madrid tapas joint years ago and fell in love with them. I can get plenty of fresh seafood here, but Gulf coast sardines don't exist... I have been happy, even though they will text you every day forever after. If it wasn't middle of the night, I'd go check freezer. I think I still have some in there... I've had their fresh anchovies also. Happy with both.

Haven't heard of the Lummi seafood company, but I have caught spot prawns from the same water. They have a great sale on them right now. $20/lb is way cheaper than the fuel and time it takes to get a limit

might have to make room in the freezer.

These are not your average prawns. Wild-caught by Lummi Nation tribal fishers in the deep, icy waters of the Salish Sea, our spot prawns are one of the most premium seafood delicacies in the Pacific Northwest. Their flavor is rich, sweet, and unbelievably buttery – often compared to (and frequently preferred over) Dung

I can’t speak to their delivery, but I’ve been eating their seafood for years and it’s definitely top quality. Lummi Island is very close to where I live and my grocery store sells their products. I definitely recommend them.

So I bit, as it were! I grabbed spot prawn tails, scallops, salmon and a tuna loin. I figure that will be enough variety to make a solid decision. Thanks for everyone’s advice. Reviews to follow!

so I opened up the albacore loin and started slicing for poke. Is this normal? I researched around and find that it’s just blood vessels from the fish struggling due the catch.

I’ve seen albacore like that before. Not very pretty for sushi.

Lummi wrote me back and stated it was blood vessels. We ate it and it was still delicious.

And tonight, I prepared the spot shrimp. Risotto with late season tomatoes from CSA. I had shrimp stock to make the risotto, too. Super creamy shrimp!
