    My Chico, CA Costco has SRF corned beef rounds for $7.99 a pound. Same price as my Raleys had for far inferior beef this week. Since you all have me on the Pastrami kick, I couldn't turn this down.

      Check your Costco up there - they are in boxes near the cheese section. I picked through them to get uniform cuts. I think we might be on the same run for products.

        So is a round a flat? I'm not familiar w it. Or, Kobe beef is just so awesome they get their own cut "the round".

        You have two. I would be tempted to hold one as a control. Cook the first one as you would have both of them. If it it turns out great? Repeat next cook. If it, check and adjust but why do that to two Kobe's. I can't stand the thought of it.

        tbob4 what's our plan for prep and cooking? Wrap/no wrap? Time and temp?

          That's a really good question. I plan to do a pastrami with one. I used the Katz recipe here but added 1 Tbs allspice, 1TBS smoked paprika 1 tsp ancho chile, 1 tsp coffee and ground the spice packet and added it to the rub. I might soak and treat the other differently.

          Round is from the back legs. Usually a horribly lean and tough cut. I'd try a SRF round at $7.99/lb because of Wagyu's marbling, but I think a prime flat corned beef would still be better. Interested to hear results.

        yeah let us know how it turns out! gonna go check here locally to see if they have it (yeah right when pigs fly but never hurts to check)

          A buddy of mine just left having eaten the pastrami I made this week from an inferior corned beef round he wants to pay good $$ for what I can't do with these. The pressure is on. I blame Senator Pig for this and his friend's mistake.

            So you used bottom round instead of brisket? I hear there are better pieces of meat than brisket navel I think?? but its not stuff you can get here in West Texas (ok anything is available on the inter webs I know just usually way to expensive especially for a test run)

              I can't believe how jealous I am right now! On a side note, keep your eyes peeled for Premiere Brand Meats corned beef brisket. They are a company based in Shasta Lake City and their briskets are excellent. I pick mine up the Ray's Food here in Mt Shasta, and it makes for great Pastrami.

                If they have them here they may in Medford. Snow level down to 2500 feet this weekend so call ahead, make a run and stock up.
