    Costco Packers Now Choice?

    Just got back from Costco. They had packer briskets, but they were choice, didn't they used to be prime? And they were $3.99 lb., which isn't that much cheaper than what I recall prime being ($4.29 iirc).

    There were times when Prime was cheaper than Choice.
    I first heard they no longer had Prime because they go to restaurants.
    Recently saw a post that is because of price.
    No actual confirmation of either cause.

      When they used to have both, the prime was an untrimmed packer, and the choice was a trimmed flat, so that pushed the price of the choice up. I recall being surprised how much though.

    That was my experience recently too - no prime packers, only choice. And you're right, the choice was not much cheaper than prime ever was (outside of volatile COVID pricing).

        In California, I've been to three local Costco's and your lucky to find Prime rib eye steaks and the only Briskets were Choice Briskets. I spoke to a meat associate last weekend, and asked when was the last time their Costco had any Prime Briskets, He said, " probably back in January". He also mentioned he has not heard of any Prime Brisket deliveries anytime soon cause he thinks it just the shortage of Prime beef for now.

          Smoked Transistors we were just in Cypress. Prime NY and Ribeye that looked like a child with a dull knife fabricated. Choice everything else.

        This is a recurring topic here. I have yet to see anything that speaks to more of a temporary regional shortage due to supply or logistical issues. Last time I was in my local Costco a few weeks back, I saw both prime and choice.

          I just cooked three Choice whole packers from Costco that turned out like butter. I would even go as far to say I can't tell the difference from the Primes I used to get there.

          When meat is graded, they don't use the brisket to determing the grade. So it's possible that a brisket labeled Prime could be more toward the Choice side of things anyway.

            Yep. Me too. My choice packer was amazing. From Costco. I thought it was due to my prolonged wet aging. But maybe it’s this! I’m traveling for a few weeks but will go for another one soon. That good

          I just found an uncashed rewards check from Costco but am currently in Southern California on vacation. I was planning on using it for bourbon and maybe a prime packer. Now leaning towards beef plate ribs though. We’ll see when I get back there.

            That’s been the case at my local Costco for several months now. When I asked, the folks in the butcher department had no idea why they were no longer getting prime.

              Yep, have not seen any Prime for months at Costco. Mentioned it to the Butcher there. He said the steak houses are scarfing it all up.

                The brisket I bought at Costco a couple months ago was prime but I haven’t been by there recently.

                    If you know how to cook a brisket properly, and I'm sure you do, there's little difference honestly. Very little.

                    In the American grading system, the entire cow is judged on the prime rib. So "prime" brisket is really just a label. Generally speaking a cow graded prime will have more marbling throughout all cuts as one labeled select, but not always. And for some cuts that tend to be fatty anyway, meh. You will likely be the only one to know, and that is only because you see the label.

                      I used to only do prime briskets from Costco, but don't think I've cooked anything other than a choice from Kroger for the past 3 years (since 2020). I do think I have to trim more fat on the ones I've got from Kroger, but the fact that the 3 choice briskets I got last week were on sale for $1.99 a pound makes up for it! I froze two, and just got done grinding the third into hamburger meat for the freezer.

                      Anyway, I think choice cooked properly can turn out great, as I've had no complaints the past few years on my brisket cooks. Wish I could find prime, but not gonna pay 4-5 a pound for it either...

                        I've had some really good Kroger CAB (certified angus beef) briskets from Kroger too. And Kroger Choice briskets--I have no complaints.
