Blasphemy spare ribs. I bought a half rack of pre sliced spares at the supermarket. Applied a Malcom Reed inspired hot rub. Smoked over hickory and Royal oak lump for 2.5 hours at any 235°F. Basted with my rum molasses sauce for the last half hour. Served with smashed taters.
They were delicious. No whiskey today as I have to drive this evening.

That is the beauty of Mr Bones. I could sometimes post a less than stellar result preceded by a Herculean effort. Somewhat embarrassed, I would post the photo anyhow. Effort deserves posting. I would always apologize for the results and I could count on Mr Bones to point out the rainbow in the cyclone.

tbob4 I agree, I think he coned me into believing I was a good cook, which then gave me the confidence to keep trying.

I’d like to point out the irony of this thread, and Mr. Bones belief, in that he stayed as far away from popular as possible, wanted nothing to do with the word. Yet, he is celebrated by all. I chuckled a few times, even seeing his face on Facebook in ribs posts.

I debated a bit, but ultimately, I know plenty of humble folk who would never want the spotlight and do everything to stay out of it... but a single public kudos makes their year. I'd like to think Bonesy would feel the same. Plus a few of the folks who saw my cook will be getting some leftovers tomorrow so they should know the importance of the reason for the cook

Got the shoulder on before midnight - and that mattered to me...
Tonight was the meal.
This shoulder only had one bone.....and there was only one Mr. Bones. I said before....we were better to have had ya, and we are less without ya bones....there was a lot of smoke wafting up your way these last couple days, I know you enjoyed it.Last edited by xaugievike; March 20, 2022, 06:49 PM.

Retired, living in Western Mass. Enjoy music, cooking and my family.
Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex SnS and OnlyFire pizza oven. A Smokey Joe and the most recent addition a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, ThermoPops and a Thermapen MK4. 3 TempSpike wireless meat thermometers.
I have tried to like every post associated with a cook. It's been challenging. That's a good thing with the now 13 pages of posts. I'll keep at it. Please keep your cooks coming. I don't think I'm done yet. It will be later in the week. Not sure what but if I do it, it's gonna have bones in the cook.

What an honor to our friend!
